1 oz Mezcal
1 oz Cognac
3/4 oz Sweet Vermouth
1/4 oz Ancho Reyes
2 Dashes Orange Bitters
Orange Twist for Garnish
Add all ingredients (except the garnish) to your mixing glass and stir with ice until completely chilled, 10-20 seconds. Strain into your Nick & Nora or other cocktail glass and garnish with the orange twist.

1.5 oz Tequlia (OR Pineapple Infused tequila, OR split base with mezcal!)
.5 oz Elderflower Liqueur (St. Germain recommended)
1/3 oz Agave Nectar
2/3 oz Lime Juice
1/4 Small Avocado
1 oz Pineapple Juice
1 Dash Tabasco
Garnish: Fresh Ground Pepper
Add all ingredients to a high speed blender with a few ice cubes. Blend until completely combined and smooth. Strain into a coupe or cocktail glass and garnish.

1 oz Spiced Pineapple Syrup*
.5 oz Lime Juice
.5 oz Pineapple Juice
2 dashes Bittermen’s Hellfire Habanero Shrub
Garnish: Tajin Rim
Prepare your coupe glasses with a little rub of lime juice and Tajin. Shake everything up in a shaker tin with ice until chilled and fine strain into your prepared glass.
*Spice Pineapple Syrup: Combine 1 part pineapple chunks, with 1 part sugar and 1/2 part water. Add a couple cinnamon sticks, star anise and clove. Simmer until sugar dissolves and let sit to steep for a couple hours. Strain out your solids and strain into a clean bottle to refrigerate.
1.5 oz Mezcal (Illegal recommended)
.75 oz Suze
.5 oz St. Germain
1 Dash Orange Bitters
Garnish: Grapefruit Twist
Stir all ingredients in a mixing glass with ice until chilled. Strain into a chilled rocks glass or coupe over large format ice and garnish.
